Whisk together vinegar, mustard, salt and pepper.

Continue whisking while drizzling in olive oil, until a smooth and tart dressing forms.

Celery should be roughly chopped into 1/2 - 3/4 inch pieces. The tiniest ribs from the core should be saved off for another use.

Add celery to dressing and toss well to coat. Adjust salt and pepper to taste.
